​Last week  we met Alicia Jorgensen, the woman behind the bar at the new Beckett’s Table. Today she shares with us the recipe for Miss Katie’s Pimms Cup, a drink crafted by owner Scott Stevens and named for his wife, Katie.

The cocktail’s made with Pimms No. 1, a gin-based drink flavored with herbs and fruit that tastes subtly of spice and citrus. Popular in Southern England, a Pimm’s Cup is the standard cocktail at British and American polo matches.

The ingredients:
2 oz. Pimm’s No.1
1 ½ oz. Ketel One Vodka
Cucumber slices
Ginger ale
Soda

How to make it:
Muddle cucumbers in the bottom of a highball glass. Mix Pimm’s and vodka in an ice-filled shaker, shaking well. Pour into the glass and use ginger ale and soda to fill. Garnish with a cucumber slice. Say, “Cheerio!” and enjoy, old sport.
