It’s the first weekend of June, which means downtown Phoenix is going to be hoppin’ with First Friday art action, a whole lot of sunshine, and maybe a pool party or two (check out Jackalope Ranch for all your summer pool party info).

And just because we’ll be out and about checkin’ out the art galleries and taking a dip in the water doesn’t mean we’re going to be skipping any meals — or poolside cocktails.

Here’s what’s on our plate…

Eat This: Appleton Rum Sea Scallops at The Breadfruit — With all the food trucks and the hot dog and burrito vendors, we sometimes forget that there are actual restaurants downtown where you can sit down and have a civilized meal. Take a break from the hustle of the busy First Friday Strip and sit down for a plate of Caribbean-inspired eats from The Breadfruit. One of our favorite plates is the savory Appleton Rum Sea Scallops. The large scallops are bathed in hot and spicy jerk seasonings and a splash of Jamaica’s Appleton Rum and then seared to perfection in a cast-iron skillet. It’s the most expensive thing on the menu, but it’s completely worth the extra bucks.

Drink This: Tequila Spiked Lemonade Poolside at The Saguaro Hotel — Every Sunday during the whole entire summer, The Saguaro Hotel will be throwing a day-drinking pool party — and unlike their Saturday event, which is only for guests, the Sunday party has an open invite ($5 cover charge). Sip on margaritas from the Distrito bar or hit up the lemonade stand for a refreshing glass of tart pink lemonade spiked with a Patron Silver. Don’t forget the sunscreen!

Bake This: Mini Churro Doughnuts — We don’t normally encourage recipes that use one of those easy-bake contraptions, but we couldn’t resist these little doughnuts from The Sweet Chick. Fluffy cinnamon spice mini-donuts glazed with a homemade dulce de leche sauce?! Breakfast doesn’t get much better than this!
